About: Sourced from one of the only vineyards in Paso Robles producing this variety, Torrontes is a very aromatic white grape that became widely popular in Argentina (although may have originated in Spain). If you are a fan of creamy textured wines and extreme citrus and floral flavors, this is a wine you need to get your hands on. 

Vineyard: Plum Orchard Vineyard, Templeton Gap  District

Varietal: 100% Torrontes 

Tasting Notes: Very aromatic, displaying mineral and floral notes typical of this variety. This includes vanilla, jasmine, geranium, orange blossom, together with fruit notes of lychee. Dry on the mouth, light fresh, creamy and balanced. High but clean acidity.

Vinification: Wine was pressed and aged for 11 months in twice used French oak 265L barriques.

Tempranillo is Spain’s viticultural gift to world of wine, and thanks to the soils and climate of Westside Paso, this varietal is just as at home here as it is in the Old Country of the Spanish countryside.

We’ve sourced the highest quality Tempranillo grapes from anywhere in the United States, and carefully mentored them on their journey from grape juice to wine, and finally allowing their fledging beauty to mature in 30% new French oak barriques for 18 months.. We believe this wine is an impeccable representation of who we are and what we do, and will entice the palate, exhilarate the nose, and intrigue the soul. This beautiful fruit driven wine presents notes of plum, dark cherries, and fresh leather. This smooth wine finishes with soft tannins and white pepper. Drink now or age approximately 8-10 years.

2021 El Cabrhone

This wine represents harmony and balance across elements that may seem to be a world apart. Behind my back, my team would joke that I was a “cabron,” meaning (in less colorful language) that I was a stickler; one who has a vision that I refuse to compromise. I'm not afraid of hard work, I don't cut corners, and I'm insistent that my team brings these same qualities to the winery every day. This blend is no different. In their original home of France, these three varietals scarcely share a latitude in common. Cabernet Sauvignon ("Cab") comes from the west, from Bordeaux, while Grenache and Petite Sirah come from southern and eastern France ("Rhone"). Due to their differing regions of origin, they can’t legally be blended or even grown with one another back home, but I know what a special synergy these grapes have when they get to know each other in a bottle, and I refuse to compromise my vision by blindly conforming to the traditions of the Old World. This is Paso, and we are Bodega de Edgar. This is Cabrhone. We are guided by aroma and taste, and traditions can be damned. I’ll always be a “cabron” about that.

Blend: 38% Cabernet Franc, 28% Cabernet Sauvignon, 18% Grenache, 16% Petite Sirah

Deep purple-hued, with lots of ripe dark cherry and berry fruits, it’s medium to full-bodied and has ample floral, spice, and meaty nuances, a gorgeous texture, and outstanding length. It’s certainly known as our flagship wine.

2020 E-SQUARED

E2 was the first blend I ever made under the label Bodega de Edgar. It represents my favorite varietal, Grenache and my wife Erika's favorite varietal, Syrah.

Fermented on native yeast, 50% whole cluster, on skin for 14-18 days. Aged for 22 months in 265L French & Hungarian oak barriques, 40% new.

Black cherry, blackberry, loamy soil and hints of oak show on the nose of this blend from Kimsey Vineyard. There is a firmly grippy structure on this dense palate as well as bright, fresh acidity, delivering flavors of dark fruit and light licorice spice.

Tasting Notes: Aromas of fresh rose water and crushed violet petals, tantalizing spices & resinous cedar fill the glass on the 2020 Tarragona. The palate reveals warm cherry pie, fresh pipe tobacco, leatherm and pomegranate seed. The vibrant velvety finish lingers like striking a finger across velvet. Drink now through 2030.
